Mike, it depends on what you like.
Many collectors favorite set this year was the Masterpeices football. It has great player pictures and a nice mixture past and present players along with rookies. There are 10 Time warp short prints, and 10 shortprint rookies in the 110 card set (actually a few less than 110 as a few cards were not produced, see checklist on UDs site). I would highly recommend this one if you like old and new football players.
My second favorite sets this year were Topps Chrome and Bowman Chrome. I preferred Topps Chrome since they were all in one box, whereas the Bowman Chrome were in the base Bowman product (first 55 chrome rcs) and Bowman Chrome (final cards 56-220). Both of these sets will present a challenge to build but if you like Chrome cards then these are probably the better two sets to chase.
If you are into a mix of college players and pros, then you might also like UD Draft football. It has shortprints (NFL vets are 2 per pack), numbered parallels, and shortprinted rookie pairing cards (1 per 2-3) packs in the 250 card set. It is a challenging set, but nice looking and fun.
Most everything else would either have way too many shortprint rookies like LCM, Leaf R&S, Gridiron Gear, Prestige, Elite. Or the set is pretty easy to complete like Topps base set or Bowman.
Just my thoughts on what I liked this year.
