I just had my last draft before the season starts (I have one draft left, but that is a defense-only league), wondering what everyone thinks of my teams:
TEAM #1 (Auction Draft - $200 Salary)

This is by far my favorite team out of all my teams (and in my biggest money league). Only downside is my QB situation, but I am looking at moving D-Bo for Eli Manning (in which case I would get rid of Henne and pick up another WR off the wire). Besides that, looks VERY solid to me, with a lot of depth (potential trade bait as the season progresses).

Another solid draft, EXCEPT in the QB department. It ended up being one of those "I can wait a few picks to get a solid QB", except every time I was ready to pick a QB, they would be taken out from under me. Oh well! I am actually working on a trade already to get Carson Palmer as my starter, probably costing me either Ocho or Sims-Walker in the process (but I may get Austin Collie in return).
TEAM #3 (Snake Draft - #2 Pick AGAIN!)

This was a 12-team league (the other two were 10-team), so I had to dig a little bit deeper this time around. The team still feels pretty solid (at least the starters do), but the bench isn't as deep as I would like. I picked Housh hoping that he goes to a team with a great QB and that I will look like a genius for picking him up. And decided to go with a QB with my 2nd pick, didn't want to wait again! Let me know what you think!
I like team 2 best.
Team 1 seems to be loaded in certain positions, but lacking in others. Some of the starters are guys that I'm worrying about, though.
Team 2 is pretty cool. I don't think your QB situation is bad at all. I'm expecting Stafford to play well this year, maybe not a starter in a 10-team league, but who knows. Besides, he only needs to start five games for you. Big Ben will carry most of that weight and that's not a terrible thing. You have some very strong depth, but it always worries me when a team only has one TE.
Team 3 has a lot of starting talent, but the bench is where my worries are. I'm not really impressed with any of the bench players unless you're getting points for kick/punt returns, in which case you need to move Cribbs to a starting position. If I was in control of any of these teams, I'd be active in the trade market. Everyone has a different set of strategies, though. Good luck and have fun.
For that many teams in those leagues, they don't look that bad to me! As for having Kolb on the first team, I think he has a great season this year!!! And you got Ricky Williams, a big sleeper!! He will have a 1,000 yard season. IMO
